About converting grams to ounces

The ounce is one of the most overloaded units in common use, and knowing which one is meant matters more than the arithmetic. How many ounces is 250 g?
8.818 ounces, just under half a pound. Recipes usually round this to 9 oz, and the difference of about 5 grams is well inside the tolerance of ordinary baking.
Is a troy ounce the same as a normal ounce?
No. A troy ounce is 31.103 grams against the ordinary avoirdupois ounce at 28.35, about ten percent heavier. Gold and silver are priced per troy ounce, which is why a "pound" of gold and a pound of flour are different weights.
Why do American recipes use cups instead of grams?
Because American home cooking measures by volume rather than weight. That is why converting is unreliable for solids: a cup of flour ranges from 120 to 150 grams depending on whether it was scooped or spooned. Weight is the more repeatable measure.
What about fluid ounces?
A different unit entirely — fluid ounces measure volume, not weight. They only coincide for water, and even then a US fluid ounce differs from an imperial one. Never convert between grams and fluid ounces directly.
